Spring is my favourite season! I love the smells, sounds, and sights of this time of year.
It also means ASPARAGUS CUTTING TIME is just around the corner, though . . . backbreaking work . . . which can be rewarding, if you look on the bright side. It's nice to be able to look at the asparagus fields by the end of the June and think, "I helped us to get through another season of asparagus cutting!" Here's a few pictures to walk you through what we do with the asparagus after it comes in off the fields. Step 1: Rinse the stalks Step 2: Cut and even the ends Step 3: Weigh the bundles to equal 1lb Step 4: Wrap elastics around the bundles to hold them together Step 5: Slip a tag over the elastic Step 6: Stack the bundles carefully in preparation for boxing
